Out of nowhere the other day I just decided I really fancied making some soup, simple as that really. It’s hard to imagine but of all the complicated dishes I cook up I have never made soup! I’ve always got fresh veggies in so I figured I could throw everything in and just make one big vegetable soup but my taste buds we’re feeling something specific. This soup did not disappoint with the full flavour of the carrot and garlic then the sweetness of the parsnip coming through it made for the most delicious lunch. I promise this is far tastier than any tinned variety and I will forever just make my own from now on.
If you want to give this super tasty and super simple soup a try here’s how…
1 clove of garlic
1 litre vegetable stock using 2 stock cubes
Salt, pepper & mixed herbs to your taste
• Dice the carrots, parsnips & onion & finely chop the garlic. Throw it all into a large pan with a lid. Season with the salt, pepper & a slight sprinkle of mixed herbs.
• Bring to the boil & then simmer for approx 30 mins or until the veg is soft. When done remove from the heat and leave to one side to cool.
• Using a blender blitz until you get a smooth texture, pour into a bowl & serve with a yummy crusty roll or whatever takes your fancy!
