✨May~Italian Themed 3 Course Meal✨

Italy I love you! You literally invented some of the most delicious food ever to pass my lips and satisfy my pallet. With pizza, pasta, bread & cheese being a hit with pretty much everyone in the world it’s no wonder Italian food rates so highly!

Starter

I feel the Italian food we frequently opt for tends to be all the heavy carb loaded varieties, we just can’t help ourselves it’s just too yummy. So even though I am starting with bread it’s rather light in terms of starters really. Now you can put whatever you fancy on top of these but I’ve decided on the following…

Ingredients

Baguette

Red wine vinegar

Olive oil

Mushrooms

Tomatoes

Basil

Garlic

What I Did

• Finely chop the tomatoes, mushrooms, basil & garlic & pop into a large bowl. Add a splash of olive oil, red wine vinegar, salt & pepper & mix together thoroughly.

• Slice the baguette diagonally into oval shapes & lightly toast on both sides. Serve up the mixture on top of the toasted slices.

Main

Spinach & Ricotta Cannelloni With Italian Dressed Salad & Homemade Garlic Bread

How I have never made a Cannelloni before is a wonder as it’s so simple and unbelievably tasty. We have frozen a full half of this so we can enjoy it again another night! This will serve 4 people with a salad like we did or even 6 people if serving along with something else.

Cannelloni

Ingredients

(For The Sauce)

1 tablespoon olive oil

5 garlic cloves chopped

4 tins chopped tomatoes

Handful of basil leaves chopped finely

2 tablespoons of red wine vinegar

(For The Filling)

Box of Cannelloni tubes

1kg spinach

100g Parmesan cheese

3x 250g tubs of ricotta

(For The Topping)

2x 250g tubs of mascarpone

2x balls of mozzarella

3 tablespoons of milk

85g Parmesan

What I Did

• Pre heat the oven to 200•c

First make the sauce by frying the garlic in the olive oil for a couple of minutes. Pour in the tomatoes, red wine vinegar & throw in the chopped up basil leaves. Stir & simmer for approx 10 mins.

• Next wilt all of the spinach in the microwave, squeeze out all of the water then finely chop & put into a large bowl. Mix in 100g Parmesan & all of the ricotta & season well with salt & pepper.

• Now fill the Cannelloni tubes with the spinach mixture with a piping bag or a knife works just as well & place into the sauce in rows.

• Mix the mascarpone & milk together & spoon over the top of the tubes. Top with the remaining Parmesan & mozerella, sprinkle with oregano then bake for 30/40 mins until golden brown.

• Serve with a simple handful of bistro salad, the homemade garlic bread & Italian dressing.

Homemade Garlic bread

Ingredients

Panini Rolls

Butter

3 garlic cloves

Oregano

What I Did

• Simply slice the rolls in half, spread with butter, sprinkle on the chopped garlic & oregano & bake in the oven for approx 5/10 mins.

Italian Dressing

Ingredients

(Serves 2 double for for 4)

2 tablespoons olive oil

2 tablespoons red wine vinegar

Good pinch oregano

Small pinch chilli flakes

Salt & pepper to taste

What I Did

• Mix everything together in a bowl then transfer into a small pouring jug or serving dish & spoon.

Desert

Tiramisu

Now you can make this in one big dish as it’s meant to be or you can divide the mixture up and layer into individual dishes like I did.

Ingredients

560ml Double Cream

250g mascarpone

Packet of sponge fingers

5 tablespoons caster sugar (brown preferably)

75ml Marsala (alternative~dry white wine)

300ml coffee made up with 2 tablespoons coffee

25g chunk dark chocolate for grating

Cocoa powder for sprinkling

What I Did

Whisk up all of the cream, mascarpone, wine & caster sugar into a bowl until super thick

• Pour the coffee into a bowl & place half the sponge fingers in for a couple of seconds to soak up some of the coffee. Place a layer of fingers in the bottom of the large serving dish or individual dishes.

• Spread over half of the cream mixture, grate half of the chocolate then repeat the layer once more with the remaining sponge fingers & coffee, the rest of the cream mixture, grated chocolate then add some cocoa powder to the top for an extra chocolate hit.

• Pop in the fridge. This will last 2 days.

What an absolutely gorgeous meal that was!
