Ok so my hubby was having a little moan that he was tiring of seeing the same sad looking bananas in the fruit bowl for the last 2 days. Instead of throwing them away I decided rather spontaneously at 5pm whilst tea was in the oven, to whip up a little homemade treat for pudding for my family. Even better I gained a little helper in the way of my 2 year old boy, so it turned into a little fun activity for us both to do together. Great for lunchboxes, after school snacks, with ice cream, custard or just on their own with a nice cup of tea. If you fancy giving them a go here’s how….
Ingredients
(Makes 12)
275g self raising flour
155g caster sugar
70g butter melted
3 ripe bananas mashed
2 eggs
1 teaspoon baking power
1 teaspoon vanilla essence (not pictured)
120 ml milk
100g roughly chopped chocolate of your choice
What We Did
• Grease or line muffin trays with cake cases & pre heat oven to gas mark 5 / 190•c
• Mix everything altogether thoroughly in a large mixing bowl then evenly fill each muffin hole
• Bake in the oven for 20/25 minutes or until golden, remove & set to one side to cool
• Enjoy 😋
If you wanted to put your own spin on these instead of chocolate chunks why not use raspberries, raisins, strawberries even mini marshmallows instead 🙂
